Blue Ridge Bites: Middle Eastern Bread Pudding from Halwa Bakery & Cafe

Karmen George from Halwa Bakery & Cafe shows us how to make a Middle Eastern Bread Pudding

ROANOKE, Va. – Karmen George, owner of Halwa Bakery & Cafe in Blacksburg, is back in the kitchen to show us how to make a recipe perfect for Fall. This middle eastern bread pudding is a popular staple in her Blacksburg cafe.

Filled with the perfect blend of sweet and tart berries, the pudding is full of nuts and delicious fall spices that make the dish pair perfectly with ice cream.

Ingredients:

  • Puff Pastry or Croissant
  • Nuts - almonds, crushed pistachio
  • Raisins
  • Cranberries
  • Shredded Coconut
  • Cinnamon
  • Ginger
  • Pumpkin spice
  • 2 cups milk (dairy free or traditional)
  • 2 cups cream
  • Sugar to taste

Directions:

  1. Begin with a baked puff pastry or croissant
  2. Tear into small bits by hand and place into a large mixing bowl
  3. Add nuts, berries, shredded coconut, and spices. Mix well.
  4. Pour mixture into clay baking pot or pyrex baking dish.
  5. In a separate bowl, add milk, cream, and sugar. Stir well.
  6. Pour the milk mixture on top of the dry mix in the baking dish.
  7. Sprinkle additional nuts, berries, and coconut on top of the mixture.
  8. Preheat oven to 350 degrees. Bake for 15 minutes until the mixture starts to bubble.

*Can be served cold or warm. Pair with ice cream.
