Blue Ridge Bites: Mango Cheesecake from Halwa Bakery

ROANOKE, Va. – Karmen George from Halwa Bakery in Blacksburg is showing us how to make a Mango Cheesecake, the perfect dessert for warm weather.

The recipe is one of George’s own, inspired by her Egyptian heritage. The cheesecake is a customer favorite that can only be found at her Blacksburg café.

Ingredients

Put the following ingredients in a food processor to make the crust.

  • 16 pieces cookie of your choice. Karmen used Lotus
  • 1/2 cup sugar
  • 1/4 cup melted butter

For the cheesecake filling, mix following ingredients in Kitchen Aid Mixer.

  • 2 blocks of room temperature cream cheese
  • 1/3 cup powder sugar
  • 1 can condense milk
  • 1 teaspoon lemon juice

Cream all together, then add 1 cup of mango purée. Blend one diced fresh mango and 1/2 cup of sugar. After blending, strain the mixture. Add fruits of your choice. Blend all together then add 1 tablespoon of unflavored gelatin resolved in hot water or milk. Pour the cheesecake mixture to the cooling crust. Then refrigerate for 6 hours, or at least freeze for 2 hours before serving.
