Daytime Kitchen: Bruschetta Chicken with 419 West

Jenna Begley from 419 West brings a delicious and creative twist on Bruschetta to the Daytime Kitchen today.

Bruschetta Chicken

2 boneless skinless chicken breast

Balsamic Reduction

Mozzarella cheese

Salt and Pepper to taste

For Bruschetta:

8oz Tomatoes, cut medium dice

1oz basil, chopped

1tsp garlic, minced

1/2Tbsp parmesan cheese

1oz white balsamic

1/2oz olive oil

Salt and Pepper to taste

Combine all ingredients for bruschetta and put aside.

Salt and pepper both sides of raw chicken. In a oiled pan over medium high heat, sear both sides of the chicken breast until cooked through. Place one thin piece of mozzarella cheese on top of the chicken breast and melt in oven. Finish with bruschetta and balsamic reduction, top with basil.
