Daytime Kitchen: Veggie Soup

Pat Leonard talks about setting realistic resolutions and a veggie soup recipe.

1 cup Celery

2 potatoes (white/sweet)

2 Squash (yellow/green)

2 cups Spinach or Kale

1 Onion

2 carrots

1 Tomato

1 cup Beans

Stock: 4 cups of water ¼ cup soy sauce ¼ cup olive oil

Chop & Combine all ingredients in large pot. Bring to a boil, turn heat down simmer up to one hour.

Serve as a clear soup or blend in processor with milk (almond or cashew) for a thick cream soup.
