Daytime Kitchen: Baked Sweet Potato

Jenna Begley from 419 West joins Natalie and Brittany in the kitchen to make a baked sweet potato with honey marshmallow cream.

Here's the recipe:

Baked Sweet Potato

1 Sweet Potato

Salt and Pepper to taste

Honey Marshmallow cream

1 cup Honey

1 Egg White

1 tsp Vanilla Extract

1 tsp Salt

Pierce sweet potato 5 or 6 times with a fork, rub with oil, salt and pepper. Bake at 400 degrees for 45 minutes to an hour or until soft. For marshmallow cream, whip egg white, vanilla extract and salt in a mixer until the whites reach to "high peaks". Meanwhile heat honey in a pot right before the boiling point, careful to not boil it. Immediately add honey to the beaten egg white and mix on high until glossy peaks form.
