We are in the kitchen with Ted Polfelt from 419 West. Ted just got back from Phoenix where he competed in the American Culinary Federations Cook Craft and Create Convention, where he competed for Chef of the Year. Today he is making us cast iron chicken thighs with grilled peaches and basil.
Here's the recipe:
Marinated Grilled peaches
2 peaches cut into wedges and grilled
2 oz. EVO
2 T basil, chiffonade
TT salt and pepper
2 cloves garlic, shaved
1/4 C apple cider vinegar
1/4 tsp Dijon mustard
Mop: combine all of the ingredients except the peaches. Then pour marinade over the peaches and let sit for atleast 1 hr.
