We are in the Frankie Rowlands Kitchen with Chef Ted Polfelt from 419 West. He brought chef and author Chris Hill with him. Chris is discussing his book, and making fried chicken liver tacos.
Here's the Recipe:
1/2 c cornmeal
1/2 c flour
1 c buttermilk
1/2 # chicken livers
TT salt and pepper
Mop: soak the livers in buttermilk for 2 hours. Combine the remaining ingredients for breading. Fry at 350f until golden brown and delicious.
Serve in a toasted flour or corn tortilla with shredded cabbage, hot sauce, and pickled onion.
