CAROLINA-STYLE SLOW COOKER (CROCK POT) PULLED PORK SLIDERS

Ingredients:

1 3-pound boneless pork shoulder roast

Salt (preferably Kosher or sea salt)

Fresh ground black pepper

½ cup water

3 tablespoons cider vinegar

2 tablespoons Worcestershire sauce

1 teaspoon cumin

½ teaspoon chili powder

1 tablespoon balsamic vinegar

3 cups barbecue sauce, divided** (do not use mesquite)

12 slider buns

Pickles (optional)

Cole slaw (optional)

Directions:

Season meat with salt and black pepper. If necessary, cut meat to fit

into a 4-quart crock pot.

In a small bowl, stir together the water, vinegar, Worcestershire sauce,

cumin, chili powder and balsamic vinegar. Pour over meat in slow cooker.

Cover and cook on low for 8-10 hours.

Remove meat from slow cooker and discard cooking liquid. Use two forks

to pull meat apart. Discard fat. Return meat to slow cooker and stir in two

cups of barbecue sauce. Cover and cook 30 minutes.

Serve on slider buns.

** I use a locally made BBQ sauce --- Carolina Spicy --- from

2Dye4Que. It can be purchased in Roanoke at Oliveto

(3565 Electric Road).
