Daytime Blue Ridge: Super Snacks

Roanoke's favorite resident, Chad Hoover, shares some manly snack ideas for the Super Bowl.

  • Ham Quiche Cups
  • Recommended Videos



    • 6 eggs
    • 1 cup milk (any type)
    • 1½ cup Mixed cheese, shredded
    • 1 green bell pepper, chopped
    • 1 medium onion, chopped
    • 2 roma tomatoes, chopped
    • ½ teaspoon dried basil
    • ¼ teaspoon garlic powder
    • ¼ teaspoon salt
    • ⅛ teaspoon pepper
    • 1 lb of thinly sliced ham

  • Preheat oven to 350 degrees F.
  • Whisk eggs in a bowl.
  • Add remaining ingredients, except for ham, and stir to combine.
  • Spray a muffin pan with cooking spray.
  • Fit two slices of ham in each chamber.
  • Spoon about 3 Tablespoons of egg mixture into each chamber so that it is ¾ full.
  • Bake for about 25 minutes or until a toothpick inserted into the center comes out clean. The top will begin to brown. If it browns too quickly, then tent a piece of aluminum foil over the top.
  • Remove from oven and cool for about 10 minutes.
  • Stuffed Jalapeno Peppers with Lil' Smokies
  • Ingredients

    • 12 jalapenos, washed, sliced in half and seeds removed
    • 8 ounces cream cheese
    • 4 ounces shredded cheddar cheese
    • 1/2 teaspoon garlic powder
    • ½ teaspoon ground cumin
    • ½ teaspoon pepper
    • ¼ teaspoon salt
    • ½ lb of prosciutto ham, thinly sliced
    • 1 package little smokies

    Instructions

    Wash and cut the jalapenos. Slice jalapenos in half and scoop out seeds and membrane if you desire a less spicy popper. In a small bowl mix together the cream cheese and cheddar cheese. Stir in garlic powder, cumin, salt and pepper. Fill each jalapeno half with about 1 to 2 teaspoons cream cheese mixture. Place 1 smokie in each jalapeno. Wrap jalapeno with half slice of prosciutto ham. Either bake or grill the jalapenos. If baking, bake for about 25 to 30 minutes at 350 degrees. Or until ham is fully cooked and the pepper is tender.

  • Cinnamon Twists
    • 1 can of regular biscuits
    • 1 cup brown sugar
    • 2 tablespoons cinnamon
    • 1 stick of butter, melted

    Preheat oven to 350 degrees. Open biscuit can and separate each biscuit. Twist biscuit into figure eight shape. Combine brown sugar and cinnamon in a bowl. Dip biscuit into melted butter then coat with cinnamon sugar mixture. Place on cookie sheet. Bake for about 15 minutes until golden brown.
