20 oz butterscotch candies, powdered

2 qt cream

2 eggs

15 yolks

4 oz sugar

heat cream then add powdered candies

combine yolks, eggs, and sugar

temper cream into yolks and strain

bake 325F (conventional oven) for 45 minutes in a water bath

ice bath and push through chinois
