•22.5 oz. bread flour

•.5 oz salt

•.22 oz yeast

•3 oz olive oil

•16 oz water

•1/2 c. herb oil

•2 c. marinara

•cheeses (provolone, fresh mozzarella, parmesan, asiago....)

1.Stir together flour, salt, and yeast.

2.Add oil and water, mixing with dough hook for 5-7 minutes.

3.Relax dough on a cutting board for at least 5 minutes.

4.Stretch dough out twice its size and fold like a letter.

5.Spray with oil and cover with plastic wrap for 30 minutes.

6.Stretch and fold again.

7.Rest for 30 minutes.

8.Stretch and fold again.

9.Rest for 1 hour and 30 minutes.

10.Pan up into a cookie sheet and brush on 1/4 c. herb oil

11.Loosly cover with plastic wrap and refrigerate overnight.

12. 3 hours before baking remove from cooler and brush with remaining herb oil.

13.Proof loosely covered and preheat your oven to 500 F

14. Gently remove plastic wrap and place in oven.

15.Turn oven down to 450 F and bake for 10 minutes

16.Rotate pan and add marinara, cheeses, fresh herbs, and extra virgin olive oil.

17.Bake for 10 more minutes.

18.Transfer to a cookie rack to cool slightly, about 10 minutes.
